Bún Chả Hà Nội is a dish that originated in northern Vietnam, but now is universally enjoyed throughout the country, including in my hometown, Saigon.
Like so many Vietnam dishes, Bún Chả Hà Nội is an “assemble-it-yourself” meal. I will provide the component parts of this traditional Vietnamese meal. You can enjoy assembling it at home!
First, is the bún (vermicelli rice noodles).
Second, is thịt nướng (grilled pork).
Third, is chả nướng (grilled pork sausage patties).
I’ll marinate, and later serve, both of the grilled meats in nước mắm (a yummy Vietnamese marinade & dressing made with fish sauce vinegar, sugar, chili pepper, and garlic.)
The fourth ingredient is pickled vegetables – green papaya and carrots – that will float in the nước mắm dressing.
And, finally, there’s a collection of seasonal, unique-flavored Vietnamese herbs & greens.
How to assemble & enjoy Bún Chả Hà Nội:
~ Place some of the bún noodles and some of the greens/herbs in a small bowl.
~ Add some of the grilled meats.
~ Now, spoon the nước mắm over all the ingredients, mix a bit, and enjoy!
~ REPEAT. Assemble again until all is gone :-).
