This week, I’ll be preparing a very special Vietnamese soup – Canh Khổ Qua (Bitter Melon Soup).
This unique (and yes, bitter) gourd will be filled with a delicious ground pork and black fungus stuffing.
It’s true that a few folk aren’t drawn to the “bitterness” of this vegetable. BUT, most love the distinct flavor, the tasty stuffing inside the gourd, and the tummy-calming effect that bitter mellon is known to have. I think you’ll really enjoy it!
