Nấm Xúc Bánh Đa is a very similar dish to my “ever-popular” Hến Xúc Bánh Đa appetizer (stir-fried river clams served on a large rice cracker). In this case, however, I’ll be preparing the VEGETARIAN version.
In place of the river clams, I’ll sautéing several types of mushrooms in a blend of rau ram, lemongrass, ginger & other Vietnamese herbs & spices. (You’ll be able to “chili-it-up” and “lime-it-up” to your preferred level of spiciness). It will be topped with crushed peanuts (please tell us if you’d prefer no peanuts in your comments).
I’ll toast large crispy Vietnamese rice & sesame seed crackers for you to use to dip into the tasty and tangy pile of mushrooms. This unique dish has its origins in central Vietnam.
