Some neighbors have asked for more vegetarian meals. This week, I’ll be preparing Phở Chay – Vegetarian Phở.
I’ll begin my Phở Chay broth by boiling various fresh fruits with a blend of classic Vietnamese herbs and spices. My Phở broth then will be filled with organic vegetables and tofus, and topped with cilantro and chopped green onion. In a separate container, you’ll find my classic Phở rice noodles and fresh Vietnamese herbs to add to the soup as you eat.
