This week is TET – the Vietnamese Lunar New Year. And, this dish is also the classic entree’ during the family celebration of Tet!
Thịt kho trứng is a basic home-cooked meal featuring “thịt heo” (pork belly in this case) and “trứng” (a hard-boiled egg) simmered in a delectable caramelized sauce and served over rice. I’ll be using the traditional duck eggs here. This dish will be served up with fresh Vietnamese herbs and vegetables (some of which I’ll be pickling myself.)

I inhaled the fabulous Thit Kho Trung soup. The pork belly was perfect, tender and delicious, and the huge duck egg was a great complement. The accompanying pickled vegetables were perfectly pickled because they did not drown in the pickling flavor – I could still taste the different types of vegetables. As always, Hai’s delicious broth possesses a complexity of well-balanced flavors. Soooo good. Thanks to master chef Hai and Joe!
